Ingredients

24 Pacific oysters in ½ shells
50 g butter
¼ onion, minced
180 g spinach, trimmed
½ cup cream
1 cup breadcrumbs
1 cup parmesan cheese, grated
dash of Bitters
pinch of cayenne pepper
½ tsp SIDS CRAZY SALT

Directions

Preheat oven to 220oC.
Remove the oysters from their shell then dip them and the shells in salty water to remove any grit.
Cook onions in butter over a moderate heat for 2 minutes. Blanch spinach then rinse in cold water and squeeze. Chop spinach roughly then add to the pan along with the cream. Reduce by half then remove pan from heat.
Mix together breadcrumbs and parmesan.
Sprinkle bitters then SIDS CRAZY SALT over the oysters. Put 1 tsp of spinach on each shell then place an oyster on top. Cover with more spinach and sprinkle with the parmesan mixture then lightly dust with cayenne pepper. Place shells on an oven tray.
Bake for 8 minutes then remove tray. Set oven to GRILL then carefully move rack to the highest position. Grill on high for 2 minutes then serve.
