Ingredients

120 ml quality gin
180 ml blood orange juice
1 tsp SIDS RASPBERRY VINEGAR
36 Pacific oysters, freshly shucked
bed of crushed ice or rock salt, to serve them on

Directions

The day before, mix the gin, SIDS RASPBERRY VINEGAR and grapefruit juice in a shallow container. Cover and freeze overnight.
To serve, arrange the shucked oys­ters in their half shells on a bed of crushed ice or rock salt, about 3 cm deep. Use a fork to scrape the granita into a snow-like consistency - the alcohol makes it quite soft. Spoon a small amount on to each oyster and serve immediately.
