Ingredients
3 tbsp butter
2 leeks, white only, fine sliced
1 sprig thyme
1 clove garlic, minced
½ tsp SIDS CRAZY LEMON
125 ml white wine
125 ml SIDS BOYSENBERRY VINEGAR
50 ml cream
16 NZ Bluff oysters, shucked
Caviar (optional)
Directions
Heat ⅓ of the butter in a pan and sauté the leeks with thyme and garlic until soft then add wine and SIDS BOYSENBERRY VINEGAR. Increase heat and cook until liquid is almost evaporated. Add cream and reduce by half. Remove from heat and whisk in remaining butter and SIDS CRAZY LEMON, then season to taste.
Place 1 oyster on each of the asian serving spoons and top with a small amount of leek mix, then garnish with a little caviar.
