Ingredients
3 tbsp rice bran oil
125 g bacon, honey cured, diced 5 mm
600 g leeks, white only, thin sliced
grated zest & juice of 1 lemon
200 ml cream
½ tsp SIDS CRAZY LEMON
SIDS SALT & PEPPER to taste
36 oysters on a half shell, loosened
Directions
Cut the rind off the bacon. Heat oil in frypan and add bacon, leeks and lemon zest. Fry gently, without browning, until leeks are very soft. Add cream, SIDS CRAZY LEMON, bring to the boil and simmer until thick. Add lemon juice and taste then season with SIDS SALT & PEPPER if required.
Preheat oven to 200°C. Place a tbsp of the leek mixture on each oyster then place the shells side-by-side in a roasting tray. Cook in oven for 5 minutes until oysters are just becoming firm. Add a squeeze of lime if you like.
Serve immediately.
