Ingredients
200 g egg or Udon noodles
1 tbsp Tamarind paste
1½ tbsp fish sauce
2 tbsp sugar
1 tsp chilli flakes
4 garlic cloves, peeled & chopped
2 eggs
300g prawns, cooked
1 cup bean sprouts
2 spring onions, coarse chopped
1 tsp SIDS CRAZY LEMON
4 tbsp roasted peanuts
2 tbsp fresh coriander
2 tbsp rice bran oil
Directions
Cook noodles as per packet instructions to al denté. Drain then set aside.
Put tamarind, fish sauce, SIDS CRAZY LEMON and sugar into a bowl and stir until the sugar has dissolved then set aside.
In a hot wok, stirfry garlic and chilli. Add noodles and stirfry a further 20 seconds. Add tamarind liquid then the prawns and stirfry a further 30 seconds.
Push the noodles to the edge of the wok and add eggs, stir to scramble them. Bring noodles back and mix with egg then add sprouts and spring onions. Stirfry a further minute, add more oil if necessary.
Remove from heat and serve topped with coriander and peanuts.
