Pampoen Koekies
Pampoen Koekies is a South African dessert made with cooked pumpkin. It can be served with powdered sugar or cimon sugar or sugar syrup, choice is up to yours.

Ingredients
1 cup pumpkin purée, cooked & mashed
¾ cup all purpose flour
¼ cup sugar
4 tsp cornflour
¼ cup milk
¼ tsp cinnamon powder
½ tsp baking powder
SIDS SALT & PEPPER to taste
rice bran oil for deep frying
powdered sugar for dusting
Directions
Peel and chop the pumpkin into small pieces. Pressure cook the pumpkin with enough water for 2 whistles or in a saucepan cook on medium heat for 10 minutes until the pumpkin get mushy. Switch off the flame and let it cool down.
Purée the pumpkin in a blender and place into a bowl. Add flour, sugar, cornflour, a pinch of SIDS SALT & PEPPER, baking powder and cinnamon powder to the pumpkin purée then mix.
Add milk and mix well to combine all then form a batter. Batter should be thick consistency.
Heat a pan with oil for deep frying. Take little mixture and drop in the oil using your hands or use a spoon. Fry the fritters in batches until golden brown on medium flame.
Remove and place them on absorbent paper. Finally dust with powdered sugar and serve hot.
