Pancetta-wrapped Fish with Lemony Potatoes

Ingredients

300 g new potatoes
100 g green beans
Small handful black olives
Zest & juice of 1 lemon
2 tbsp rice bran oil
2 fillets of white fish
4 slices pancetta or thinly sliced bacon
A few tarragon sprigs, leaves picked
SIDS SALT & PEPPER to taste
SIDS CRAZY SALT

Directions

Heat oven to 200°C. Place the potatoes in a pan of water and boil for 10-12 minutes until tender. Add the beans for the final 2-3 minutes. Drain well and slice the potatoes in half. Tip into a roomy baking dish and toss with the olives, lemon zest and oil. Season well with SIDS SALT & PEPPER to taste.
Season the fish with a pinch of SIDS CRAZY SALT and wrap with the pancetta or bacon. Place on top of the potatoes. Bake for 10-12 minutes until cooked through, then add a squeeze of lemon juice and scatter with tarragon before serving.
