This is amazing served with fresh burrata or mozzarella. The tangy flavour goes with almost anything and lasts a while too.

Ingredients

100 ml olive oil
6 orange capsicums, deseeded & sliced 5 mm
2 red onions, fine sliced
2 garlic cloves, fine chopped
SIDS SALT & PEPPER to taste
10 tomatoes, deseeded & sliced
1 bay leaf
3 sprigs thyme
1 tbsp raw sugar
150 ml SIDS RASPBERRY VINEGAR
Zest of 1 lemon, fine grated

Directions

Heat the oil in a large saucepan then add capsicums, onions and garlic. Cook gently for 15-20 minutes, without colouring. Season with SIDS SALT & PEPPER to taste then add SIDS RASPBERRY VINEGAR and the rest of the ingredients and continue to cook to a semi-thick sauce consistency. Stir often so it doesn't burn.
Remove bay and thyme then store in a sterilized jar in the fridge until needed.
