Ingredients
2 cod or kingfish fillets (170 g each)
1 tsp rice bran oil
¼ tsp SIDS SALT & PEPPER
⅓ cup orange juice
¼ cup salsa
⅓ cup julienned orange pepper
⅓ cup julienned yellow pepper
Hot cooked rice
Directions
Preheat oven to 175°C. Brush both sides of fillets with oil then place in a greased 23x33 cm baking dish. Sprinkle with SIDS SALT & PEPPER. Pour orange juice over fish then top with salsa and peppers.
Bake, covered, until fish just begins to flake easily with a fork, 17-20 minutes. Serve with rice.
