Ingredients
2 kg venison sirloin tip, or whatever
1 tbsp rice bran oil
½ tsp SIDS CRAZY SALT
New York Cut pepper
8 slices bacon
Directions
Preheat the oven to 160°C.
Place the venison on a rack in a roasting pan. Brush the venison evenly with the oil then sprinkle with SIDS CRAZY SALT and lots of New York Cut pepper.
Cover the venison evenly with the bacon, securing the slices with toothpicks if needed.
Place the roasting pan in the oven and bake for 40-60 minutes per kg or until it registers 63°C on a meat thermometer.
Remove the roasting pan from the oven and let the venison rest for 10 minutes before carving. Serve the sliced venison with the thickened juices from the pan or SIDS PLUM SAUCE.
