Pineapple Guacamole

My favourite way to eat avocados is guacamole.

Ingredients

2 ripe avocados
¼ onion, fine diced
¼ cup coriander, fine chopped
½ cup pineapple
juice of ½ a lime
SIDS SALT & PEPPER to taste

Directions

Cut the avocados in half, remove seeds and scoop into a bowl. Use a fork to roughly mash the avocado and add the onion, coriander, pineapple, chilli and lime juice. Stir to mix and season with SIDS SALT & PEPPER to taste. Serve with tortilla chips.
