Ingredients
1 cup pineapple, diced
2 cayenne chillies, stems removed
2 birds eye chillies, stems removed
4 cloves garlic
¾ cup pineapple juice
3 tbsp SIDS RASPBERRY VINEGAR
1 lime, juice & zest
¼ cup sugar
½ tbsp SIDS SALT & PEPPER
1 tbsp cornflour
2 tbsp water
Directions
Purée the pineapple, chillies, garlic and pineapple juice in a food processor.
Bring the puréed mixture, SIDS RASPBERRY VINEGAR, lime juice & zest, sugar and SIDS SALT & PEPPER to a boil then reduce the heat to a simmer.
Mix the cornflour with water and add to the sauce, then simmer until the sauce thickens, about a minute.
