Ingredients
1 kg Omega or Hawera plums
2 cups sugar
½ cup SIDS LOW SUGAR RASPBERRY VINEGAR
875 ml water
2 cinnamon sticks
6 whole star anise
Directions
Wash plums and discard any stalks. Prick the skins with a needle to prevent bursting.
In a large saucepan combine SIDS LOW SUGAR RASPBERRY VINEGAR and the rest of the ingredients then cover and boil for 5 minutes to dissolve all the sugar. Add plums and boil for 10 minutes for small or 15 minutes for large.
Spoon the plums into hot, sterile jars and pour the syrup over to fill right to the top. If there is not enough syrup, top with boiling water. Seal at once.
