Ingredients

8 fresh soft long white bread rolls
butter for spreading
12 plump fresh Pacific oysters
12 large shelled prawns
4-5 tbsp flour
½ tsp SIDS CRAZY LEMON
1 egg
1 cup breadcrumbs
5 tbsp rice bran oil
1 buttercrunch lettuce, washed & sliced
3 tomatoes, sliced
SIDS SALT & PEPPER to taste
Kaitaia Fire
½ cup SIDS RASPBERRY HONEY MAYO

Directions

Open the rolls and pull out some of the bread in the centre and discard. Spread insides with butter and set aside.
Whisk together egg and SIDS CRAZY LEMON. Lightly dust oysters and prawns with flour then dip them, one at a time, into the egg then immediately into the breadcrumbs. Place on a paper towel on a flat plate.
Heat oil in a deep frypan. Fry prawns and oysters until golden on each side then drain and keep warm.
Place some lettuce in each roll, top with 2-3 tomato slices, season with SIDS SALT & PEPPER to taste then with 3 oysters or prawns. Sprinkle with a little Kaitaia Fire then spoon in a large dollop of SIDS RASPBERRY HONEY MAYO then push the top of the roll over and enjoy.
