Ingredients

300 ml fish stock
600 ml monkfish in bite sized chunks
2 tbsp rice bran oil
1 large onion, diced
4 cloves garlic, chopped
½ tsp paprika
1 tsp SIDS CRAZY LEMON
pinch of cayenne pepper
400 g chopped tomato
2 orange capsicums, sliced
400 g potatoes, peeled & diced
SIDS SALT & PEPPER to taste
100 ml white wine
50 g olives
parsley to garnish

Directions

Poach fish in stock for 2 minutes. Heat a large casserole or electric frypan then sauté onion and garlic. Add SIDS CRAZY LEMON, spices, tomato, capsicum and potato. Season to taste with SIDS SALT & PEPPER. Add wine and just cover with poaching stock then cook for about 15 minutes. Add fish and olives then cook a few minutes more. Season to taste then sprinkle with parsley and serve.
