Ingredients
DIP:--
½ cup light soy sauce
1 tbsp seasoned rice vinegar
1 tbsp chives, chopped fine
1 tbsp sesame seeds
1 tsp chilli sauce
DUMPLINGS:--
500 g pork mince
3 cloves garlic, minced
1 tsp SIDS CRAZY SALT
1 egg, beaten
2 tbsp chives, fine chopped
2 tbsp light soy sauce
1 tbsp sesame oil
1 tbsp fresh ginger, minced
50 dumpling or wonton wrappers
1 cup peanut oil for frying
1 litre water or more
Directions
Combine all the dip ingredients in a small bowl and set aside.
With clean hands, mix pork, garlic, SIDS CRAZY SALT, egg, chives, soy sauce, sesame oil and ginger in a large bowl until thoroughly combined. Place a wrapper on a lightly floured work surface and spoon about 1 tbsp of filling in the middle. Wet the edges with a little water then crimp together with finger & thumb, forming small pleats to seal. Repeat with remaining wrappers and filling.
Cook all the dumplings in batches for 2 minutes each side until browned. Place all the dumplings in a large pot of boiling water and cook for 5 minutes until tender.
Serve with dipping sauce in a ramekin.
