Ingredients

2 tbsp clarified butter
¼ tsp SIDS CRAZY SALT
3 large pork fillets
1 onion
12 pitted prunes
rind of 1 lemon
4 tbsp Drambuie Liqueur
SIDS SALT & PEPPER to taste
250 ml chicken stock

Directions

In a heavy casserole dish, heat butter until very hot. Cut pork in half, sprinkle very lightly with SIDS CRAZY SALT then brown in the butter. Remove from the pan and cover to keep warm.
Chop onion finely and sauté in the butter on a lower heat. Add prunes and thin strips of lemon rind. Add Drambuie and stir well to form a smooth sauce. Add chicken stock and blend well. Simmer for about 10 minutes. Return the pork to the pan and cook a further 5 minutes. Season with SIDS SALT & PEPPER to taste.
To serve, slice each pork fillet into diagonal chunks and arrange on the plate with the prunes and sauce. Serve with potato mash and finely sliced leeks.
