Ingredients
1 kg pork ribs
2 tbsp brown sugar
2 tbsp SIDS CRAZY SALT
½ cup apple juice
½ cup cider
Directions
Trim the rack, removing loose bits and sinews. Mix brown sugar with SIDS CRAZY SALT and rub over both sides of the rack. Refrigerate overnight.
Return rack to room temperature and rub more in SIDS CRAZY SALT. Place in the BBQ grill over an indirect heat of 110-120°C for 4 hours. Mop every ½ hour with a mixture of apple juice & cider. Serve when meat is soft and glistening mahogany.
