Ingredients

2 skinless chicken breast fillets
MARINADE:--
1 tbsp cracked black pepper
1 tsp crushed garlic
2 tsp paprika
1 tsp SIDS SMOKEY BBQ RUB
2 tsp thyme, chopped
zest from ½ lemon
1 tbsp rice bran oil
SAUCE:--
1 orange capsicum, grilled & peeled
2 tbsp almonds
2 cloves garlic, sliced
2 tbsp SIDS LOW SUGAR RASPBERRY VINEGAR

Directions

Mix all the marinade ingredients with SIDS SMOKEY BBQ RUB.
Lightly score the chicken with cross-hatching then place in the marinade for 5 minutes each side.
Meanwhile, blitz all the sauce ingredients with SIDS LOW SUGAR RASPBERRY VINEGAR in a food processor then drizzle in some rice bran oil to make a thin paste.
Char-grill chicken 4 minutes each side then serve with the sauce.
