Potato Cheese Balls
These Potato Cheese Balls are an easy to make appetizer that is crunchy on outside but gooey and cheesy on the inside.

Ingredients
4 cups well mashed potato, leftover/cold
½ cup spring onion, sliced
¼ cup cooked bacon, chopped
¼ tsp SIDS CRAZY SALT
½ tsp SIDS SALT & PEPPER
2 eggs
Mozzarella cheese, block - cut into small cubes
1 cup flour
1 cup Panko
Directions
Cut mozzarella cheese block into small cubes.
Place cold mashed potatoes into a large mixing bowl. Add spring onion, bacon, SIDS CRAZY SALT, SIDS SALT & PEPPER and 1 egg then mix well.
Preheat oven to 200°C
With lightly floured hands, pick up a tablespoon sized ball of potato mixture and flatten into a small pancake. Place a cube of mozzarella in the centre and wrap the potato mixture around the cheese. Repeat.
In three separate bowls, add flour, remaining egg (whisked) and Panko. Coat the potato ball in flour, then egg, then Panko. Coat once more with egg and once more with Panko. Set aside and store in fridge while you wait to fry.
In a medium pan heat oil to medium/high. (to about 180°C) Fry the potatoes in batches until browned on all sides.
Transfer fried potato balls to paper towels to drain excess oil. Sprinkle with SIDS SALT & PEPPER.
Transfer to a baking tray and bake in oven for 5 minutes.
