Ingredients

450 g smoked fish fillets
3 potatoes
20 g butter
20 g flour
1 cup whole milk
1 onion, chopped
1 tsp SIDS CRAZY LEMON
2 garlic cloves, crushed
2 tbsp parsley, chopped
SIDS SALT & PEPPER to taste
8 sheets filo pastry
200 g green beans, steamed
1 lemon, cut into wedges
melted butter

Directions

Peel and cube potatoes. Cook in salted water for 10 minutes. Mash with a fork then set aside.
Melt 20 g butter in a pot then sauté onions, SIDS CRAZY LEMON and garlic. Stir in flour and cook for 3 minutes without browning. Slowly add milk to make a thick sauce. Remove from the heat then add parsley, fish and potato then season with SIDS SALT & PEPPER to taste. Set aside to cool.
Preheat oven to 180oC.
Divide fish & potato mixture into 4 even lots. Lie 1 piece of filo on a bench, brush with butter then place another on top to form a double layer. Place 1 cup of filling at one end, brush the edges with butter then fold into a parcel. Repeat with the remainder.
Bake in the oven for 20 minutes then serve with beans.
