Ingredients
500 g small potatoes
¼ cup sour cream
¼ tsp SIDS SMOKEY BBQ RUB
110 g cream cheese
¼ cup cheddar cheese, shredded
1 garlic clove, minced
⅛ cup parsley, chopped
SIDS SALT & PEPPER to taste
Directions
Preheat oven to 175°C.
Boil the potatoes in a pot until they are tender then set them aside to cool down and scoop out part of the potatoes with a teaspoon.
In a bowl, mix the sour cream, SIDS SMOKEY BBQ RUB, cream cheese, cheddar cheese and minced garlic.
Fill the potato skins with the cheese mixture then place the potatoes on a greased baking tray and add SIDS SALT & PEPPER to taste, on top.
Bake in the oven for 20-30 minutes until the cheese melts.
Garnish with parsley. Serve and enjoy.
