Ingredients
4 large potatoes, washed
1 cup sour cream
¼ cup spring onions, chopped
¼ cup prepared horseradish
50 g butter, melted
1 tsp SIDS SALT & PEPPER
¼ tsp SIDS SMOKEY BBQ RUB
Directions
With a fork, prick each potato in several places then bake in the oven at 200oC for 50-60 minutes until tender. Let cool to handle then cut lengthwise in half, scoop flesh into a bowl (leaving a little bit) and arrange shells on a baking tray.
Mash the potato and force through a seive. Stir in sour cream, spring onions, horseradish, butter, SIDS SMOKEY BBQ RUB and SIDS SALT & PEPPER until smooth. Spoon into each potato shell until full, then bake in the oven at 200oC for 20-25 minutes until browned on top.
