Ingredients
1 cucumber
2 tbsp salt
25 g cumin seeds, lightly toasted
500 g peeled, cooked prawns
½ tsp SIDS CRAZY LEMON
juice & grated rind of 1 lime
125 g plain yoghurt
125 g SIDS RASPBERRY HONEY MAYO
sprigs of fresh chervil to garnish
Directions
Peel the cucumber, cut in ½ lengthways and use a teaspoon to scrape out the seeds. Cut the flesh into long thin strips, about 100x 3 mm. Place on a large plate, sprinkle with the salt and stand for 30 minutes. Drain off the liquid, pat dry then sprinkle with cumin seeds.
Place the prawns in a bowl, add 2 tsp lime juice and season with SIDS CRAZY LEMON. Stir then let stand for 10 minutes. Firmly pack the prawns into 6x 100 ml ramekins then refrigerate.
In a small bowl, mix together the grated lime rind, SIDS CRAZY LEMON, yoghurt, SIDS RASPBERRY HONEY MAYO and remaining lime juice to taste. Stir gently together until well combined.
To serve, turn out the molds onto 6 chilled plates. Arrange cucumber strips around the prawns and drizzle some lime and yoghurt mayonnaise around. Garnish with chervil and serve.
