Prawns Fried with Garlic & White Pepper

It might not sound like much, but it's a very satisfying dish, especially made with shrimp that's shell-on. Eat the shrimp, shell and all. Serve with lots of rice.

Ingredients

8 cloves garlic, chopped
2 tbsp tapioca flour
2 tbsp fish sauce
2 tbsp light soy sauce
1 tbsp white sugar
½ tsp ground white pepper
¼ cup rice bran oil, divided
500 g whole unpeeled prawns, divided

Directions

Combine garlic, tapioca flour, fish sauce, soy sauce, sugar, and white pepper in a bowl then add prawns and toss to coat.
Heat 2 tablespoons oil in a heavy frypan over high heat. Add ½ of the prawns in single layer then fry until golden brown and crispy, 1-2 minutes per side. Repeat with remaining oil and remaining prawns.
Known in Thailand as Goong Tod Kratiem Prik Thai.
