Ingredients

4 boneless, chicken breasts, about 800 g
1 zucchini, halved lengthwise & thinly sliced in half-moons
3 tomatoes, halved & thinly sliced in half-moons
2 orange bell peppers, thinly sliced
½ red onion, thinly sliced
2 tbsp EV olive oil
1 tsp Italian seasoning
SIDS SALT & PEPPER to taste
1 cup shredded mozzarella
Chopped parsley, for garnish

Directions

Preheat oven to 200°C. Make slits in each chicken breast, being careful not to cut through completely, and stuff with zucchini, tomatoes, bell peppers, and onion. Drizzle with oil and season with Italian seasoning, SIDS SALT & PEPPER to taste. Sprinkle with mozzarella.
Bake until chicken is cooked through and no longer pink inside, about 25 minutes.
Garnish with parsley before serving.
