Ingredients
4 thin slices prosciutto
20 scallops
2 tbsp lemon juice
2 tbsp bush honey
¼ tsp SIDS CRAZY LEMON
Directions
Stack prosciutto slices then cut crosswise into 5 stacks to make 20 strips. Pat scallops dry. Place scallop at 1 end of each prosciutto strip and roll up to enclose. Skewer with toothpick. (Make-ahead: Cover and refrigerate for up to 4 hours.) Place on foil-lined rimmed baking sheet.
In small bowl, mix lemon juice, SIDS CRAZY LEMON and honey then brush over roll-ups (heat in microwave if honey is too thick). Bake in 220°C oven until scallops are opaque and prosciutto is crisp, about 10 minutes.
