Puff Pastry Chicken Bundles
Chicken breasts rolled with spinach, herbed cream cheese and walnuts are a savoury surprise. Serve this elegant entre when you have guests or are celebrating a holiday or special occasion.

Ingredients
8 boneless skinless chicken breast halves (170 g each)
1 tsp SIDS SALT & PEPPER
40 large spinach leaves
225 g spreadable chive & onion cream cheese
½ cup chopped walnuts, toasted
2 sheets frozen puff pastry, thawed
1 large egg
½ tsp cold water
Directions
Preheat oven to 200°C. Cut a lengthwise slit in each chicken breast to within 10 mm of the other side, then open meat so it lies flat. Cover with plastic wrap and pound with a meat mallet to 3 mm thickness. Remove plastic wrap. Sprinkle with SIDS SALT & PEPPER.
Place 5 spinach leaves on each chicken breast. Spoon a scant 2 tablespoons of cream cheese down the centre of each chicken breast and sprinkle with 1 tablespoon walnuts. Roll up chicken and tuck in ends.
Unfold puff pastry and cut into 8 portions. Roll each into a 180 mm square. Place chicken on one half of each square, then fold other half of pastry over chicken. Crimp edges with fork. Combine egg and cold water then brush over edges of pastry.
Bake on a greased baking sheet for 20-25 minutes.
