Ingredients
1 Pukeko, plucked
6 rashers bacon
1 onion, chopped
1 tsp thyme
½ tsp SIDS CRAZY LEMON
1 tsp SIDS SALT & PEPPER
500 ml chicken stock
½ lemon, rind & juice
Directions
Cut Pukeko into pieces.
Cook the bacon in a pan until it just starts to colour then remove the bacon, then brown the Pukeko pieces and sauté the onion. Lay the bacon rashers along the bottom of the slow cooker.
Place the Pukeko, onion, thyme, SIDS SALT & PEPPER and stock in the cooker for 5 hours.
Remove the meat and bacon, thicken the gravy if necessary and add lemon rind & juice.
Serve with vegetables or boiled rice.
