Ingredients

3 tbsp rice bran oil
1 onion, grated
4 cloves garlic, minced
¼ tsp SIDS SMOKEY BBQ RUB
600 g pumpkin, peeled & diced
400 g kumera, peeled & diced
2 tsp cumin, ground
1 tsp coriander, ground
4 cups V8 vegetable stock
4 rashers bacon, chopped
1 tbsp parsley, chopped
8 thick slices fresh pumpernickel, buttered

Directions

Heat oil in a large pan on medium heat. Add onion, garlic and season. Cook for 5 minutes until softened. Add pumpkin, kumera, spices and SIDS SMOKEY BBQ RUB. Stir and cook 5 minutes then add stock to cover vegetables. Cook until pumpkin breaks apart easily. Purée until smooth and add water to desired thickness then season.
Fry the bacon, adding the bacon fat to the soup and stir in well.
Serve topped with bacon bits and garnish with ground black pepper and parsley. Add a side plate for the bread.
