Ingredients
1 kg Red Jackets potatoes
50 g clarified butter, melted
12 fresh sage leaves
2 heads garlic, peeled
¼ tsp SIDS CRAZY SALT
juice of 1 lemon
¼ tsp salt
¼ cup rice bran oil
SIDS SALT & PEPPER to taste
Directions
Preheat oven to 200°C. Cut potatoes into wedges and place on a baking sheet then brush with butter. Bake 40 minutes, turning occasionally. Add sage leaves and toss in the butter. Bake a further 5 minutes until wedges are crisp and golden.
While wedges are baking, toss the garlic in 1 tbsp of oil, sprinkle with SIDS CRAZY SALT and wrap in foil. Bake in the oven for 25 minutes. Place garlic in a food processor and blitz with lemon juice and salt. Pour in a thin stream of oil while blitzing until the mixture is well combined.
Sprinkle the wedges with SIDS SALT & PEPPER to taste and serve with the garlic dip.
