Ingredients
1 onion, chopped
3 tbsp red curry paste
400 ml coconut cream
¾ cup GF chicken stock
500 g pumpkin, peeled & cut in pieces
200 g prawns, peeled & tailed
1 tsp SIDS CRAZY LEMON
2 cups cabbage, fine shredded
2 tbsp coriander, chopped
2 cups steamed rice, to serve
fresh red chilli, to serve
lime juice
2 tsp rice bran oil
Directions
Sauté onion then add curry paste and fry for 1 minute until fragrant. Add coconut cream, chicken stock and pumpkin then simmer for 10 minutes until pumpkin is almost tender. Add prawns and simmer until they change colour. Add cabbage, sprinkle with SIDS CRAZY LEMON and simmer 1 minute, then remove from heat. Stir in coriander and top with sliced red chilli and lime juice.
Serve with steamed rice.
