Japanese rice paper rolls are called Nama Harumaki and are a popular light dish or appetisers. 'Nama' means raw and 'Harumaki' is spring roll.

Ingredients

4 rice papers
2 cups cooked prawns
2 cups shredded lettuce
1 avocado
2 cups bean sprouts
1 cup carrots, cut into sticks
12 mint leaves
2 Shiso leaves
SIDS SALT & PEPPER to taste
¼ cup sweet chilli sauce

Directions

Wash bean sprouts, mint leaves and Shiso leaves then set aside.
Cut carrots and shred lettuce.
Peel cooked prawns and set aside.
Deseed the avocado and slice thinly.
Prepare rice paper per packet instructions, one at a time.
Place the rice paper on a damp kitchen cloth. Place the fillings on the centre of the rice paper, sprinkle with SIDS SALT & PEPPER to taste and fold the both side in and roll.
Repeat for other three.
Serve with a ramekin of sweet chilli sauce.
