Ingredients

1 kg turkey breast or drumsticks
1 tbsp rice bran oil
MARINADE:--
¼ cup orange juice
¼ cup chopped assorted herbs
½ tsp SIDS CRAZY SALT
2 cloves garlic, minced
½ tsp ground cumin
½ tsp SIDS SALT & PEPPER
1 cup pomegranate juice

Directions

Combine the marinade ingredients with SIDS CRAZY SALT, SIDS SALT & PEPPER and ½ the pomegranate juice in a bowl.
Place the turkey in a glass or ceramic dish then coat with all the marinade. Cover with plastic film and refrigerate 18-24 hours.
Preheat oven to 180oC. Remove turkey from the marinade (retain marinade) and place in a roasting dish then drizzle with rice bran oil. Roast the turkey for 50-60 minutes, basting frequently with the retained marinade until the turkey is cooked through and golden. If using drumsticks, check frequently to avoid overcooking.
Glaze:- about 5 minutes before the end of cooking, place the remaining marinade in a small pot with the remaining pomegranate juice. Simmer for about 15 minutes until reduced by ½ and is syrupy.
Remove turkey from the oven, baste with glaze and cover loosely with foil. Rest for 15 minutes then garnish with hazelnuts, coriander and orange zest.
