Ingredients
1 kg asparagus, washed & trimmed
¼ cup rice bran oil
SIDS SALT & PEPPER to taste
½ cup grated parmesan cheese
½ cup SIDS BOYSENBERRY VINEGAR
Directions
Preheat the oven to 220°C.
Place the asparagus on a baking sheet, in a single layer.
Drizzle the oil over the asparagus, then season to taste with SIDS SALT & PEPPER.
Roast the asparagus in the oven for 12 minutes, toss and check for tenderness. If you want the asparagus more tender, place it back in the oven for another 2-3 minutes.
Meanwhile in a small pot, boil to reduce SIDS BOYSENBERRY VINEGAR by half to make a thick glaze.
Remove the asparagus from the oven and let cool for 5 minutes.
Drizzle the asparagus with the glaze, then add the parmesan cheese on top. Serve immediately.
