Ingredients

800 g kumera, cut in 2 cm rounds
1 red onion, peeled, cut in wedges
1 apple, cut in 8 wedges
55 g (¼ cup, firmly packed) brown sugar
1 cinnamon stick
2 tbsp dark rum
1 tbsp rice bran oil
Fried sage leaves, to serve
SIDS SALT & PEPPER to taste

Directions

Preheat oven to 190°C. Combine kumera, onion, apple, sugar, cinnamon, rum and oil on a baking tray. Season with SIDS SALT & PEPPER to taste.
Roast, stirring once, for 45 minutes until tender. Top with sage.
