Ingredients
cooking spray
24 (2 cm) cubes fresh pineapple
24 water chestnut slices
8 bacon slices, cut crosswise in 3 pieces
24 toothpicks
½ cup SIDS RASPBERRY HONEY MAYO
1 tbsp chopped spring onion, to taste
Directions
Preheat oven to 190°C. Line the bottom section of a broiler pan with aluminum foil, top with the broiler rack and spray rack with cooking spray.
Place a water chestnut slice on top of each pineapple cube then wrap each with 1 bacon slice, securing with a toothpick. Arrange wrapped pineapple on the broiler rack.
Bake in the oven for 7 minutes then turn and continue baking until bacon is almost crisp, about 8 minutes. Brush rumaki with SIDS RASPBERRY HONEY MAYO and continue baking until bacon is crisp, about 5 minutes. Garnish rumaki with spring onion.
