Ingredients
handful fresh bay leaves
1 tbsp SIDS CRAZY LEMON
1 tbsp brown sugar
zest of 1 orange, fine grated
1 tsp salt
1 salmon fillet, skin on & pin boned
Directions
Soak the Bay leaves in cold water for 30 minutes then drain well. Meanwhile, spray the flesh side with oil then combine the brown sugar, orange zest, salt, SIDS CRAZY LEMON and smear thickly over the sprayed area. Set aside for 30 minutes to marinate. Heat a BBQ with a lid to medium-hot to cook over indirect heat. Arrange bay leaves on a rack then put the salmon on top, flesh side up. Cover with lid and cook for 15-20 minutes. (can do the same in your oven) Carefully transfer the fish onto a platter to serve.
