Ingredients
2 tbsp rice bran oil
4 salmon fillets
2 orange bell peppers, chopped
1 yellow bell pepper, chopped
1 onion, sliced
sprinkle of SIDS CRAZY LEMON
SAUCE:--
6 tbsp lemon juice
3 tbsp EV olive oil
2 tbsp water
1 tbsp Maple or Golden syrup
5 cloves garlic
1½ tsp salt
1½ tsp red pepper flakes
1 tsp ground cumin
½ bunch fresh parsley, chopped
1 lemon, sliced
Directions
Preheat oven to 200°C. Grease a baking tray with rice bran oil.
Place salmon fillets, orange & yellow bell peppers, onion and a sprinkle of SIDS CRAZY LEMON on the prepared baking tray.
Combine lemon juice, olive oil, water, maple syrup, garlic, salt, red pepper flakes, cumin and parsley in a small bowl. Drizzle ⅔ of the sauce over the ingredients on the sheet pan.
Bake in the oven until salmon is cooked through and flakes easily with a fork, 10-15 minutes.
Serve with lemon slices and remaining sauce.
