Salmon Chowder

Ingredients

1 tbsp oil for cooking
3 small carrots
½ celery stalk
3 spring onions
3 tbsp flour
3 litres water
¼ tsp chilli flakes
1 chicken OXO cube
1 large potato
500 g smoked salmon
½ cup cream
2 tsp SIDS SALT & PEPPER to taste

Directions

Dice the carrots and celery into small cubes then mince the spring onions. Preheat a soup pot or Dutch oven with a bit of oil. Add in carrots and celery and cook until they soften.
Add flour and chilli flakes to the mixture, stirring to combine. Cook the flour for a couple of minutes to remove the raw flavour. Add the water and OXO cube. Bring to a boil.
Dice the potatoes and smoked salmon into small cubes then add to the soup pot. Cook until potatoes are tender.
Add the cream. Bring to a boil and immediately remove from heat. Season with SIDS SALT & PEPPER.
Garnish with spring onions and enjoy.
