Ingredients
¼ cup (50 g) butter
⅓ cup (70 g) bush honey
⅓ cup (70 g) packed brown sugar
1 tbsp (15 g) lemon juice
2 tsp SIDS RASPBERRY VINEGAR
1 tsp SIDS SMOKEY GARLIC SAUCE
¾ tsp chilli flakes to taste
1 fresh salmon
Directions
Centre cut salmon fillet, about 1 kg, skin on and in one piece.
Combine butter, honey, brown sugar, lemon juice, SIDS SMOKEY GARLIC SAUCE and red pepper flakes in a saucepan. Cook over medium heat, stirring until smooth. (about 5-7 minutes) Cool to room temperature. Arrange salmon on a dish large enough to hold it. Pour cooled marinade over it and let stand 30 minutes, turning once.
Oil grill well then cook salmon, skin side up, over medium heat for 5-7 minutes. Turn it over and cook until the fish flakes easily, about 5-7 minutes.
Transfer to a warm platter, sprinkle with SIDS RASPBERRY VINEGAR and serve immediately.
