Ingredients
2x 250 g salmon fillets
SIDS CRAZY LEMON
6 strips of streaky bacon
3 tbsp real maple syrup
1 tbsp SIDS WINE & PEPPER MUSTARD
¼ lemon, zested
Directions
Remove skin and debone the fillets, sprinkle SIDS CRAZY LEMON on both sides.
Tightly wrap each fillet in the bacon, securing with tooth picks.
For the glaze, stir the maple syrup, SIDS WINE & PEPPER MUSTARD and lemon zest together.
If you are using a gas/charcoal grill - heat grill until hot then cook fillets until bacon is crisp. Drizzle the mustard glaze on top then flip over. Baste the top side and cook until an instant read thermometer reads 57oC.
If you are using and oven grill - move the oven rack to the top position and turn on. Put a wire rack on a baking sheet and preheat the rack under the grill for a few minutes. Place the fillets on the rack and grill until the bacon starts to brown. Drizzle the maple syrup onto the tops a few times and return to the grill until an instant read thermometer reads 57oC.
Serve on preheated long serving dishes.
