Ingredients
500 g salmon fillet, skinned, cut into cubes
¼ cup Panko breadcrumbs
½ tsp chilli powder
2 tbsp freshly chopped parsley
2 cloves garlic, minced
1 egg
SIDS SALT & PEPPER to taste
AVOCADO CREAM:--
1 avocado
Juice of 2 limes
¼ cup sour cream or yoghurt
½ tsp SIDS CRAZY LEMON
¼ cup basil
2 tbsp parsley
Directions
Preheat oven to 175°C. Line a large, rimmed baking tray with oven paper and coat with cooking spray.
Salmon Meatballs: Process salmon in a food processor until finely chopped, then transfer to a large bowl. Add Panko, chilli powder, parsley, garlic, egg and season generously with SIDS SALT & PEPPER. Stir to combine, then form into tablespoon-sized meatballs. Place onto baking tray.
Bake until meatballs are slightly golden and cooked through, 15-17 minutes.
Avocado Cream: In a food processor, add avocado, lime juice, yoghurt, SIDS CRAZY LEMON, basil and parsley. Season with SIDS SALT & PEPPER, then process until smooth. If the sauce is too thick, thin it out with water.
Serve meatballs drizzled with avocado cream and garnish with more parsley.
