Ingredients

oven paper or foil
½ cup grated tasty cheese
10 spears asparagus
2 salmon fillets
1 tsp SIDS SMOKEY BBQ RUB
1 tsp rice bran oil

Directions

Cut oven paper to wrap salmon like fish 'n' chips.
Preheat oven to 205oC.
Bring a pot of lightly salted water to a boil. Add asparagus and cook uncovered until slightly tender, about 5 minutes. Drain in a colander, then immediately immerse in ice water for several minutes until cold to stop the cooking process. Once the asparagus is cold, drain well and set aside.
Place 1 salmon fillet and half the asparagus in the middle of one parcel paper that has been covered with ½ tsp oil. Sprinkle with ½ tsp SIDS SMOKEY BBQ RUB and ¼ cup of cheese on top. Fold like fish 'n' chips. Repeat with the second piece of oven paper and remaining ingredients. Place pouches on a baking sheet with cheese side up.
Bake in the oven for 10-15 minutes. Remove from oven and allow to sit for 5 minutes before unwrapping. The salmon is done when it flakes easily with a fork.
Serve the parcels on a plate with lemon wedges and encourage your guests to eat then straight out of the paper.
