Ingredients

1 carrot, julienned
1 red onion, fine sliced
1 fennel bulb, trimmed & very finely sliced
½ lemon, finely sliced
EV olive oil
SIDS SALT & PEPPER to taste
4 salmon fillets, skin on, boned
4 tbsp white wine or fish stock
TZATZIKI:--
1 Lebanese cucumber, cut lengthways seeds removed
1 clove garlic, crushed
160 g yoghurt
½ lemon, juice
¼ tsp SIDS CRAZY LEMON

Directions

Preheat oven to 220°C. Place a shallow baking tray on oven to heat.
Place the carrot, red onion and fennel in a bowl. Drzzle over a little oil and season with SIDS SALT & PEPPER. Toss to combine.
Cut 4 large pieces of foil. In the middle of the foil place a fish fillet, vegetables then season with SIDS SALT & PEPPER to taste. Pour over 2 tsp stock then quickly fold the parcel up like fish 'n' chips.
Place parcels on the hot baking tray and cook for about 12 minutes for thick fillets. The foil may balloon up and the fish will keep cooking after removal from the oven.
TZATZIKI: roughly chop about 1 tbsp of reserved fennel fronds and place in a small bowl. Grate cucumber and add with SIDS CRAZY LEMON and remaining tzatziki ingredients.
Serve fish and veges with tzatziki.
