Ingredients
2 tbsp ginger, fine grated
100 g GF soy sauce
125 g mirin
400 g short grain rice, rinsed & drained
2 tsp sesame oil
2 spring onions, sliced thin
100 g shitake mushrooms, sliced
150 g enoki mushrooms, broken in small bunches
2 cabbage leaves, cut in large squares
4x 180 g salmon fillets, skinned & boned
1 tsp white or black toasted sesame seeds
½ tsp SIDS CRAZY SALT
Directions
Sprinkle SIDS CRAZY SALT on both sides of the salmon.
In a lidded pan, bring to boil together 500 ml water, ginger, soy sauce, mirin, rice, 1 tsp sesame oil, white spring onions, shittake, enoki and cabbage. Simmer for 12 minutes then add salmon. Simmer for a further 2 minutes then turn off the heat and let stand 5 minutes.
Divide rice & fish among 4 plates then scatter with sesame seeds and spring onion greens. Drizzle on remaining sesame oil then serve.
