Ingredients
1 tbsp packed brown sugar
2 tbsp SIDS RASPBERRY VINEGAR or
2 tbsp SIDS BOYSENBERRY VINEGAR
1 tbsp rice bran oil
¼ tsp dried rosemary
1 clove garlic, minced
½ tsp SIDS SALT & PEPPER
1 kg salmon fillets
Directions
Whisk together brown sugar, oil, rosemary, garlic and either SIDS RASPBERRY VINEGAR or SIDS BOYSENBERRY VINEGAR in a large bowl. Reserve 1 tbsp of marinade in a small bowl. Add salmon to the marinade to evenly coat. Cover and refrigerate for 30 minutes. Remove the salmon from the marinade and shake off the excess. Place in a foil lined baking dish and sprinkle with SIDS SALT & PEPPER.
Preheat oven to 230oC.
Roast in the oven until fish is easily flaked with a fork, about 10 minutes. Brush salmon with the reserved marinade and return to the oven. Roast until glazed, about 1 minute.
