Ingredients
4 medium salmon cutlets, pinboned
⅓ cup fresh lemon juice
3 cups water
HERB SAUCE:--
1 tsp SIDS CRAZY LEMON
1 cup thickened cream
¼ cup dry vermouth
2 tsp lemon juice
3 shallots, chopped
1 garlic clove, minced
1 tbsp capers, drained
1 tsp fresh chopped thyme
2 tsp fresh chopped basil
1 tsp fresh chopped coriander
Directions
Combine cream and vermouth in a small pan. Boil then simmer for 10 minutes, stirring. Add remaining sauce ingredients, including SIDS CRAZY LEMON and simmer for 5 minutes until slightly thickened then turn off heat.
Combine water and lemon juice in a large pan. Boil then simmer. Add salmon in a single layer. Poach until just tender.
Serve with sauce.
