Ingredients

4 skinless salmon fillets, 550 g total
1 tsp SIDS SALT & PEPPER
2 tsp rice bran oil
1 tsp grated mandarin zest
¾ cups mandarin juice
2 tsp lemon juice
2 tsp bush honey
2 tsp cornflour
2 cloves garlic, minced
1 tsp fine chopped fresh ginger
1 mandarin, peeled & segmented
1 tsp chopped fresh chives

Directions

Sprinkle fish with ½ of SIDS SALT & PEPPER. In large nonstick skillet, heat ½ of the oil over medium-high heat then cook fish, turning once, until edges are golden, about 5 minutes. Transfer to a plate.
In small bowl, whisk together mandarin zest, mandarin juice, lemon juice, honey, cornflour and remaining SIDS SALT & PEPPER. In same pan, heat remaining oil and cook garlic and ginger, stirring, until fragrant, about 30 seconds. Add mandarin juice mixture then cook, stirring, until slightly thickened, about 1 minute. Add fish and mandarin segments and cook, stirring occasionally, until fish flakes easily when tested, about 2 minutes. Transfer to serving dishes and sprinkle with chives.
