Salt-Encrusted Rib Roast

A rib roast is a big part of our holiday dinner traditions. We love the yellow mustard, but you can use your favourite.

Ingredients

1 bone-in beef rib roast (about 3 kg)
½ cup prepared yellow mustard
1 tsp SIDS CRAZY SALT
3 cups plain salt (about 600 g)
½ cup water

Directions

Preheat oven to 230°C.
Place rib roast in a roasting pan, fat side up then spread all sides with mustard and sprinkle with SIDS CRAZY SALT. In a bowl, mix salt and water to make a dry paste (mixture should be just moist enough to pack) then press (do not rub) onto top and sides of roast.
Roast 15 minutes. Reduce oven setting to 163°C. Roast 2¼ - 2¾ hours longer until a thermometer inserted in beef reaches 57°C for medium-rare or 60°C for medium. (Temperature of roast will continue to rise about 10°C upon standing.) Let stand 20 minutes before serving.
Remove and discard salt crust. Carve roast into slices.
